Since this trip to Salt Lake City was very last minute we didn’t know exactly how long we would be staying in town or if we wanted to take the time in the state to travel a bit. We decided to take the first couple days to lay low while still getting out into the city to see some sites. We made trips as a family to the capitol building, downtown area, the Great Salt Lake, and even to the Young Living farm.
One evening Matt and I got to sneak away for a date night while we still had grandma with us. We were happy to take full advantage of this as it was probably going to be our last for a while. We drove out to Park City, UT where one of our favorite distilleries has a restaurant. It was the perfect evening to enjoy an outdoor meal at High West and walk the streets of this little ski town. It still felt so crazy to be here with our new daughter and not at home where a hurricane just came through.
I loved the hint of fall weather in the mountains and even just walking around the home we were staying at was so relaxing with the fall decorations, shopping, and coffee shop nearby. It was the perfect way to start off life with a little baby.
We had to stay in town until we could appear in court to get the legal process started towards her finalization in 6 months. We chose to finalize in Utah and we are required to appear in court for this process. Thankfully they allow you to only appear once and not at the end of the 6 month period. We were able to get a quick appointment with the judge which allowed us to leave the city for some sightseeing before we were cleared to leave the state.
