I’m often looking for quick lunches and snacks to have on hand that are low carb, flavorful, and filling. I love finding recipes that are simple and that make me feel like I’m totally cheating on my diet! I make these cucumber and salmon bites often and I usually have all the ingredients at my house. I buy a few packs of the thin-sliced smoked salmon and freeze them for whenever I’m wanting to make this recipe.
If you love sushi or have a thing for bagels and lox then this recipe will fulfill your cravings and leave you satisfied.
I love the fresh combo of the cucumbers with the smoked salmon plus the savory cream cheese sans the bagel. Honestly, I look more forward to the seasoning than the bagel itself so I always have a jar of Everything But the Bagel Seasoning from Traders Joe’s on my spice shelf. If you have some seasonally fresh herbs those are also a great addition but not necessary.
Cucumber and Salmon Cream Cheese Bites
Ingredients:
1 cucumber
2 ounces cream cheese
4 ounces smoked salmon (thin cut)
Fresh or Dried Dill
Fresh Chives
Everything But The Bagel Seasoning
- Slice cucumber into 1/4 inch size.
- Pat cucumber slices dry.
- Spread layer of cream cheese on each cucumber slice.
- Top with smoked salmon.
- Sprinkle with fresh herbs.
- Sprinkle with Everything But The Bagel Seasoning.
